Salted Caramel Slice

If something has the words "salted caramel" in it, then there is a pretty good chance that I am going to eat it. These scrummy little treats are SO tasty and simple to make. I also made them gluten free because everyone should be able to experience these yummy little guys. 

 

And yes, in an attempt to be arty, that is my shed in the background of one of the pictures. Also on offer at Caroline's random arty shot gallery, we have the casual "I am just sitting in the middle of some random grass eating my caramel slice" picture. In reality, it was me running out to the garden and lying down on the grass trying to get a good shot like a madwoman and then dashing back inside because man it is freezing outside now! There was also a lot of swatting away flies and wasps action involved.

INGREDIENTS

150G GLUTEN FREE DIGESTIVE BISCUITS

4 TBSP ALMOND OR PEANUT BUTTER

4 TBSP GOLDEN SYRUP

100G DARK CHOCOLATE

1/2  TSP SEA SALT

MAKES 9

  • Gently melt together the golden syrup and almond butter to create your 'caramel'. Then add the sea salt and mix.

  • In a zip-lock bag, go full on "HULK SMASH" on your digestive biscuits, using a rolling pin.

  • Next, tip the biscuits into your 'caramel' and give it a stir. 

  • Pour the mixture into a foil lined tin and pop into the fridge for 30 minutes. 

  • Melt the dark chocolate (double check it doesn't have any milk in the ingredients) and pour over the yummy caramel biscuit base. 

  • Leave it to set in the fridge for another 30 minutes (sorry I know it is torture waiting).

  • Cut into 9 squares and gobble them up. If you are feeling all fancy then sprinkle over some sea salt on top.
