
Christmas Gingerbread
AHHH it's CHRISTMAS!!! I am a full on Buddy the Elf this time of year. I am currently writing this in Xmas jammies, with Christmas songs blaring in the background. Also the amount of sugar I have consumed building this gingerbread house is probably contributing to me being a bit more hyper than usual.
I decided to make a mini gingerbread house this year from scratch because lets face it, those ready to build gingerbread houses normally don't taste that great. This way you will have a delicious house to tear apart and eat once you've got your insta pic of it. I also made some chocolate shortbread trees that I will probably post the recipe for next year. And yes I went a bit OTT and added little fairy lights inside to make it looks like actual little gingerbread people live in there. Typing that has made me realise how actually mad I am...

INGREDIENTS
180g PLAIN FLOUR
1 1/2 TSP GROUND GINGER
1/2 CINNAMON
1/2 TSP BICARBONATE OF SODA
65g BUTTER
90g BROWN SUGAR
1/2 BEATEN EGG
2 1/2 TBSP GOLDEN SYRUP
ICING SUGAR TO DECORATE

Preheat the oven to 180C (160 fan, gas mark 4) .

Sift the flour into a large bowl. Then add in the ginger, cinnamon, bicarb and give it all a stir together.

Cut the butter up a bit to make the next part easier. Also popping it in the microwave for 20 seconds to soften it helps. Add the butter to the bowl and use your fingers to rub together the flour and butter until it starts to look like breadcrumbs.

Then stir in the sugar.

Next add the egg (in a separate bowl crack the egg and beat with a fork then only add about half of this) and the golden syrup.

Knead the mixture into a dough (try not to overwork the dough though) and then roll out the dough into a large thin square about 5mm deep. The dough will rise a bit in the oven so the thinner the better.

Cut out whatever shapes you like. You could do what I did and cut out some rectangles to make a house or you could make some little gingerbread men. Whatever ya fancy really.

Pop them on a baking tray lined with baking paper and bake for 12 minutes.

Leave them to cool and then decorate.
