(I can't believe these are vegan)

cookies 

After a whole lot of trial and error, I finally managed to create this great vegan alternative to the ULTIMATE COOKIES. They are also gluten free, and I know what you are thinking, but I promise you, they are still packed with flavour, warming chocolatey goodness and feel like an indulgent treat. And dont worry, there is no tofu or quinoa in sight. 

The greatest discovery on my search for vegan alternatives, was finding out that most 70% dark chocolate is dairy free! YAAAAAY! I replaced regular butter with nut butter, which is full of protein, healthy fats and tastes AMAZING. Here I used almond, but I know that it can be a wee bit pricey so feel free to replace it with peanut butter which is usually less expensive. I've also used coconut sugar but if you don't have any, fear not, brown sugar will work just as well. Admittedly, they don't look quite as beautiful as the ULTIMATE COOKIES but those are like the Scarlett Johansson or Margot Robbie of cookies, so it's a bit unfair to compare them looks-wise. They taste amazing which is all that matters. Basically, the moral of the story is that it is amazing what some fairy lights and a block of wood can do. Enjoy! x 

INGREDIENTS

 

1/2 CUP COCONUT SUGAR

1/2 CUP ALMOND BUTTER

 

3 TBSP ALMOND MILK

 

3/4 CUP FINE MILLED INSTANT OATS

 

3 TBSP COCOA POWDER

 

1/4 TSP BICARB OF SODA

 

1/4 TSP BAKING POWDER

60g 70% DARK CHOCOLATE

(I USE G&B)

PINCH OF SALT

 

Makes 9 cookies

  • Preheat your oven to 200°C (180°C fan, gas mark 6).  In a bowl, mix together the almond butter and coconut sugar, then add the almond milk and continue to mix.

  • Next, add the oats (if you are using whole rolled oats, throw them in a food processor or blender for about 30 seconds to get a finer, more flour-like consistency), cocoa powder, bicarb and baking powder. I find it easier to just to mix all the ingredients together with my hands here. 

  • Chop your dark chocolate up into little chunks and add to your mixture along with a pinch of salt. 

  • Line a baking tray with kitchen foil and create 9  ball shapes from your dough, then flatten them into roughly the shape you want your finally cookie to be. Pop them in the FRIDGE for 5 minutes which will help them to keep their shape in the oven. Remove from the fridge and shove them into the oven for 10 minutes.

  • When you take them out of the oven, they will look soft but just leave and they will firm up. Sometimes you get explosions of chocolate out from the sides but just use a knife to help tidy them up a bit.

 

 

  • This last step is really important. Boil the kettle. Make a cup of tea or coffee. Get your laptop out. Put on an episode of Friends. Put one or two of your cookies onto a jazzy looking plate. Take an instagrammable photo (tag me in it ). And enjoy your cookies.
