 THE BEST OF BOTH WORLDS

I have swapped the lab for the kitchen!

Anyone who knows me, knows that I don't go to a social event without a tin of baked goods, and cookies seemed to be the answer to breaking the ice.

First day of Uni- bring cookies.

First week in the lab- bring cookies.

Saturdays at work- bring cookies

Pre drinks- bring cookies.

Exam mental breakdowns- bring cookies.

And it never seemed to fail. So for anyone who is now my friend, I am guessing it is the result of our first cookie encounter- *friends realising that I have just manipulated them into being my friend with cookies*.

Thanks to my Immunology degree, I am constantly being reminded about all the horrible diseases out there and one thing that often comes up under ways to help prevent certain diseases, is having a healthy diet. With the surge in veganism , I thought that along with the FULL ON CHOCOLATE FILLED, GIVE ME ALL THE CALORIES, IT'S BEEN A ROUGH WEEK baked goods, I would also put up an alternative healthier version. So whether you are looking for a cosy weekend yummy treat, are vegan, coeliac, dairy intolerant or just trying to eat a bit healthier then hopefully there is something here for you. And I PROMISE the healthier versions taste just as good and not like the rubbish, cardboard tasting, crumbly and overpriced stuff you get at the supermarket. Hopefully here you can get the best of both worlds (cue Hannah Montana music)

Whether you choose to make the healthy or the not so healthy version, I just hope you enjoy it! And I am not judging which one you pick hahah. One of the best sayings I've heard is:

"the only food you should feel guilty

about eating is food you steal"

So as long as you aren't sneaking out of Tesco with a bag of flour up your jumper and chocolate bars in your pockets, I really don't mind. If you really want some cake, then have a slice of cake! Otherwise you will just restrict yourself and end up probably eating half a cake instead later down the line.

I am also thinking that if I do keep going with this, then I will give the batches of baked goods that I make for pictures and experimenting, to the homeless around Edinburgh and do a bit of good in the world.

I really hope you like it and happy baking!

                         Love,

                               Caroline
