
The Ultimate Chocolate Chunk Cookies
If you are looking for a foolproof, soft and chewy cookie recipe that will make people want to be your friend and then follow you around calling you "cookie duuude" (5 points if you get the reference) then you have come to the right place. If there was ever a cookie that had the potential to solve all of life's problems, this is it. The first words that come to mind when trying to describe them are 'absolute beasts', which may not be a words that you would normally associate with, or look for in a delicious cookie but once you make them, you will understand why. You may start to notice your arteries clogging from even looking at them but WORTH IT! The key is to use the big bar of milky bar chocolate because somehow it manages to stay soft and creamy even once the cookie has cooled. I have no idea how this works- they don't teach you this kind of sorcery at Uni. The milky bar kid ain't so strong and tough now. Sorry that was a terrible joke.
Aaaaaaanyway here is the recipe!

INGREDIENTS
200g BUTTER
290g CASTER SUGAR
1 LARGE EGG
255g SELF RAISING FLOUR
75g COCOA POWDER
1OOg MILKY BAR
150g MILK CHOCOLATE (I USE CADBURY)
Makes 16 cookies

First, preheat your oven to 200°C (180°C fan, gas mark 6). In a large bowl mix together the butter and the sugar, until it becomes light and fluffy. I normally throw the butter in the microwave before for about 10 seconds just to make it a bit softer.

Next, crack in the egg (make sure it is a large egg and not medium) and mix. Fun fact - if you add about a tablespoon of the flour you are going to be using later, it will prevent the mixture from curdling.

Now sift in the flour and coco powder. Break your chocolate up into chunks (I usually cut most of the milky bar chunks in half and keep the Cadbury chunks whole) and add to the the bowl. Knead the mixture together with your hands. If the mixture isn't coming together, add a splash of milk. The consistency you are looking for (this is going to sound gross but bear with me) is almost like playdough.

Form your dough into balls, but DO NOT feel tempted to flatten them into what you think the final cookie should look like. You should manage to make about 16. This next step is crucial to prevent your cookies from turning into flat, stuck together messes in the oven! Put your balls of cookie dough onto a baking tray lined with kitchen foil and them throw them in the FRIDGE for about 10-15 mins. This will help them to keep their shape in the oven

Remove from the fridge and pop into the oven for 10 minutes. They will look soft when you take them out but will firm up, so don't leave them in for any longer than 10 minutes. Even as little as 2 minutes over can end up ruining them.

Leave them to cool and then devour or share them with friends if you are feeling nice.
