Oaty Vegan Biscuits
"Oh no I forgot they are vegan!"
Is this you the day before your Christmas party with the relatives? If it is, then fear not because these warming, chewy biscuits are here to save you. The ingredients are super simple so there is a good chance you already have everything in your kitchen cupboards ready to rustle them up.
Also a nice wee bonus is that they are also gluten free so you have all your bases covered.

INGREDIENTS
120g BROWN SUGAR
100g VEGAN BUTTER OR MARGARINE
100g GLUTEN FREE OATS (BLITZED IN A FOOD PROCESSOR)
PINCH OF SALT
1/4 TSP BICARB OF SODA
1 TSP GROUND GINGER
1/2 TSP CINNAMON
1 TBSP GOLDEN SYRUP
50g DARK CHOCOLATE

Preheat the oven to 190C (170 fan, gas mark 5)

Using a wooden spoon, mix the vegan butter and sugar together until you get a nice creamy buttery yummy mixture. Lick the spoon.

Once you have licked the spoon, give it a clean and stir in the oats, salt, bicarb, ginger, cinnamon and golden syrup.

Roll out the dough (about 1cm deep) and cut out 12 circles using a cookie cutter. By all means go mad and make little gingerbread men shapes or whatever ya fancy.

Bake for 12-15 mins until they look a lovely golden brown colour.

Leave them to cool on a wire rap. Melt the dark chocolate and once the biscuits are cool, drizzle it over them. You can be a bit creative here and either just drizzle or you could dunk them in the chocolate for even more chocolately goodness.

Find a cute Christmassy plate to put them on. Try to leave some for other people.
