
Mickey Mouse Oreo Cupcakes
Ok so this was originally just regular oreo cupcakes and then I added an extra oreo and boom it turned into Mickey Mouse and it was too adorable to go back. I am trying to justify that it could be Halloweenish but you might need to add some red food colouring and make dead Mickey. Well that got dark.
Anyway, these taste amazing and have a little secret oreo underneath them which always a nice surprise.

INGREDIENTS
110g MARGARINE
110g CASTER SUGAR
2 EGGS
1 TSP VANILLA EXTRACT
100g SELF RAISING FLOUR
2 HEAPED TBSP COCOA POWDER
1/2 TSP BAKING POWDER
300g (2 PACKS) OREOS
BUTTERCREAM ICING
500g ICING SUGAR
250g BUTTER
1 TSP VANILLA EXTRACT
1 TBSP MILK
5 OREOS

Preheat the oven to 180C (160C fan).

In a large bowl, beat together the margarine and sugar until light and fluffy.

Next crack in the egg and whisk. If the mixture starts to curdle and look weird add a tablespoon of the self raising flour while you whisk. Then add in the vanilla.

Sift in the flour and cocoa powder and gently fold it into the mixture. Be careful not to knock all the air out of the mixture.

Pop an oreo cookie into each of your 10 cupcake cases, and then spoon in your cupcake mixture. Fill the cases about 3/4 full.

Bake for 20 mins.

While the cakes are cooling, make the buttercream icing. You can only put on the icing when the cupcakes have cooled completely.

To make the icing, warm the butter in the microwave for about 30 secs so soften it. Then add in the icing sugar, milk and vanilla and mix well.

In a freezer bag pop about 5 oreos in and whack until all the biscuits are completely crushed and add to the icing.

You can use a piping bag or just spoon on the icing to the cupcakes. Add 2 oreos to each side to create the ears.
