
No-Bake VEGAN Chocolate Brownies
These are vegan, gluten free and SO easy to make. I used a mini food processor to make them but if you don’t have one, just crush the pecans using a rolling pin and try to cut the dates finely and it will work just as well. I added some melted dark chocolate on top just to make them extra indulgent. I honestly think they are better than a popular vegan fruit and nut bar they sell at the supermarket (cough cough, Nakd bar, cough).
I love pecans because they have a sort of caramel flavour to them so they work really well here. Not gonna lie, I used to hate them because I thought they looked like cockroaches, but look at me now! Hope that hasn’t put you off too much. These are absolutely foolproof because you don't have to bake them or anything. Also, my brother just asked me if he could have one of my brownies and he couldn't tell, from looking at them, which brownie was the healthy one and which was the unhealthy one, which I took as a good sign.

INGREDIENTS
1 CUP PECANS
1 CUP DATES
4 TBSP MAPLE SYRUP
PINCH OF SALT
2 TBSP RAW COCOA POWDER
50g DARK OR ANY VEGAN CHOCOLATE
Throw the dates, maple syrup, pinch of salt and pecans into a food processor and blitz until it starts to form a sticky dough (takes about 20 seconds). Then add the cocoa powder and blitz again.
Take out the nutty date mixture and flatten with a rolling pin into a square and leave it in the fridge for 15 minutes. Melt the dark chocolate and pour over the top.
Cut into 8 slices.
Seriously that's all there is to it. Not joking, it is really that simple.
